Serves 2
1 ½ cups dairy-free milk or water
4 kale leaves
½ cup blueberries
½ avocado
2 tablespoons shredded coconut (for garnish)
If you have a high-speed blender, add all the ingredients in the order they are listed (WITHOUT the ice). Blend until smooth. If you want your smoothie to be colder, add the ice and blend. Feel free to add water to reach your desired thickness. Smoothie can be sweetened with 1-2 tablespoons of raw honey or coconut sugar or opt for a no-sugar sweetener such as stevia, which is what I use and recommend, as it doesn’t spike your blood sugar. I suggest 2-3 drops or 2 tiny scoops (if powdered) of stevia per smoothie.
