[RECIPE] PROVENCE SKILLET
Serves: 4
Ingredients (use organic where possible):
- 2 tablespoons coconut oil
- 1 cup frozen diced bell pepper and onion blend
- 2 cups chopped butternut squash
- 2 cups cauliflower florets, chopped
- 2 cups broccoli florets, chopped
- 1 tablespoon herbs de Provence
- Sea salt, garlic powder, and black pepper, to taste
- 1/2 cup vegetable broth
- 1 15-ounce BPA-free cans diced fire roasted tomatoes
- 2 15-ounce BPA-free cans kidney beans, drained and rinsed
- 1/4 cup chopped fresh parsley
- 1 cup of green beans
For an omnivore option, top prepared bowls with sliced pesto lamb chops.
Directions:
- Add oil to a large pot over medium heat.
- When hot, add frozen blend, squash, cauliflower, broccoli, and dry seasonings. Cook for 10 minutes or until golden brown.
- Stir in broth, tomatoes, and beans, then cover. Cook for 10 minutes, then serve in bowls topped with parsley.
