In case you haven’t picked up on it yet, I like butternut squash a lot. It’s one of my fall staples. Today I want to share something a little different with you. It’s a squash soup that includes some surprising ingredients and flavors. It’s not your typical butternut squash soup, but I promise it’s delicious. It’s also something that you could easily serve at the start of a dinner party or when you’re having friends over for lunch.

RECIPE

BUTTERNUT SQUASH AND PEAR GINGER SOUP

Ingredients:

1 Tablespoon olive oil
1 Large onion, chopped
1 Tablespoon ginger, grated
1 Large butternut squash, peeled, cored and cubed
2 Pears
4 Cups vegetable broth
Salt and pepper to taste

 

Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and grated ginger. Cook until onions are translucent.
2. Add the squash, vegetable broth, salt, and pepper and bring to a boil. Reduce heat and let simmer for 15 minutes or until the squash is tender.
3. Let the mixture cool and blend with an immersion blender.
4. Serve
