[RECIPE] TUNA CAKES
Makes 6 patties
Ingredients (use organic where possible):
- 3 tablespoons coconut oil
- 4 5-ounce BPA-free cans of wild-caught tuna in water, drained
- 1 egg
- 1 teaspoon Dijon mustard
- 1/2 cup almond flour
- 1 tablespoon dried parsley
- 1 tablespoon dehydrated chopped onions (or 1 teaspoon onion powder)
- Sea salt and black pepper, to taste
- Zest and juice of 1 lemon
Directions:
- Add oil to a large skillet over medium heat.
- Meanwhile, mix together all remaining ingredients in a medium mixing bowl until well combined.
- Form the mixture into 6 round patties, then adds the patties to the hot pan.
- Fry for 5-7 minutes on each side or until heated through and crispy golden brown on both sides.
- Drain cooked tuna cakes on a paper towel-lined plate before enjoying with your favorite side.
