[RECIPE] BULGOGI SKILLET PORK
Serves: 4
Ingredients (use organic where possible):
- 1 tablespoon coconut oil
- 4 scallions, chopped
- 1 pound lean ground pork
- 1 teaspoon ginger powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/4 cup wheat-free tamari or coconut aminos
- 2 tablespoons maple syrup
- 3 tablespoons red wine vinegar
- 1 tablespoon tapioca starch (optional)
Directions:
- Add butter or oil to a large skillet over medium-high heat. When hot, add scallions, pork, and dry seasonings.
- Use a spatula to finely crumble the meat, then stir in tamari, maple syrup, vinegar, and optional tapioca starch. Cook, stirring rarely, until the edges of the mixture are caramelized and a little crispy.
- Enjoy served with your favorite side dish.
