[RECIPE] CHEDDAR BROCCOLI SLAW SALAD

Serves: 2

Ingredients (use organic where possible):

  • 2 cups broccoli slaw (discard any included dressing)
  • 1 cup frozen green peas, thawed
  • 1/4 cup toasted sunflower seeds
  • 1 scallion, minced
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup raisins
  • 1/2 cup shredded organic cheddar cheese or vegan cheese
  • 1 15-ounce BPA-free can chickpeas, drained and rinsed
  • 1/4 cup healthy dressing of choice
  • Sea salt and black pepper, to taste

For an omnivore option, add diced nitrate-free ham when tossing the salad or serve with chicken or beef on the side.

Directions:

  1. Add all ingredients to a medium mixing bowl. Toss gently to combine.
  2. Divide mixture between 2 serving bowls and enjoy.
